Chicken Soup with Rice, Lemon and Mint


There is an old saying in Portugal “There is always time for Soup” the Portuguese make some beautiful wholesome soups like Caldo Verde or Sopa Da Pedra, our particular favorite is Canja so here is a simple recipe from A taste of Portugal Tours to get you in the mood for your trip to Portugal, Enjoy !!

Ingredients

2 Skinless Chicken Breast Fillets
2 Tablespoons of Olive Oil
1 Pint of Chicken Stock
1 large Juicy Lemon

A Small Bunch of fresh Mint
A handful of Long Grain Rice
A Splash of White Wine





Method

1. Heat the oil in a large saucepan over a medium heat, add the chicken fillets cook for a couple of minutes on each side or until lightly golden.

2. At this stage add a splash of white wine to de-glaze the pan before adding the pint of chicken stock, lower the heat and simmer for approx 15 minutes.

3. After 15 minutes remove the chicken breasts from the pan of stock and set aside, add your hand full of long grain rice to the pan and bring to the boil for a further 12 minutes or until rice is cooked.

4. Cut Chicken Breasts into slices, and return to the pan with the juice from a whole fresh lemon.

5. Finally a couple of minutes before serving chop the small bunch of fresh mint and add to the pan.
